Vietnamese Beef & Noodle Bowl

Stovetop, Grater, Colander, Frying pan


Rice noodles (vermicelli)

Step 1

Cook or soak the rice noodles according to the package instructions. When done, rinse them under cold water. Drain & set aside.


Step 2

Wash the cucumber. Cut in half lengthwise & slice into thin half moons. Set aside in a small bowl.

Carrots (fresh)

Step 3

Peel & grate the carrot. Set aside in a small bowl.

Sugar (granulated)
Rice vinegar
Soy sauce
Fish sauce

Step 4

In a third bowl, whisk together the sugar, vinegar, soy sauce, oil & fish sauce (optional). Reserve 1/4 of the sauce for the meat. Pour the rest in equal parts into the carrot & cucumber bowls. Toss each to combine.

Beef (steak)

Step 5

Cut the steak into thin slices, against the grain. In a frying pan, heat a drizzle of oil over medium-high heat. Brown the steak for 2 minutes, stirring frequently.

Step 6

Mix the remaining sauce into the meat pan. Stir to combine. When meat is cooked through, remove from the pan. Thicken & reduce the sauce for about 2 more minutes. Remove from heat.

Step 7

Arrange the noodles, carrots & cucumber in a large shallow bowl. Spoon over the remaining carrot & cucumber marinades.

Cilantro (fresh)

Step 8

Top with the beef & cooking sauce. Garnish with chopped peanuts & fresh cilantro leaves (optional). Enjoy!
