Red onion

Step 1

Preheat the oven to 400°F. Peel & slice the onion into wedges.

Zucchini

Step 2

Wash & halve the zucchini lengthwise. Then slice diagonally.

Lemon

Step 3

Wash & slice the lemon into thin rounds.

Step 4

In a baking dish, add the onions, zucchini & sliced lemon. Add a drizzle of olive oil & mix well to evenly coat.

Cherry tomatoes
Feta cheese (block)

Step 5

Add the tomatoes & feta*. Season everything with salt & pepper. Add another drizzle of olive oil. Bake in the oven for 25-30 min at 400°F. *Check out our tips for this step!

Pasta (orzo)

Step 6

Meanwhile, in a pot of salted, boiling water, cook the orzo according to package instructions. Once cooked, drain & set aside.

Basil (fresh)

Step 7

Once the vegetables are nicely browned, remove the dish from the oven. Serve the roasted vegetables & feta over orzo. Add a few basil leaves (optional). Serve & enjoy!
