Stovetop, Peeler, Grater, Pot (small)
Peel & chop the onion.
Mince or crush the garlic.
Peel & cut the carrot into 1-inch pieces.
Add a drizzle of olive oil to a pot over medium heat. Add the onion & cook for 5 min, stirring occasionally.
Add the carrots, garlic & quinoa. Cook for 5 min, stirring frequently.
Crumble in the bouillon cube. Add 1 cup of water (per person). Season with salt & pepper. Cover, reduce the heat to low & cook for 20 min.
Remove the lid. Add the spinach, shrimp, lemon juice & lemon zest. Cook for 3 min, or until the shrimp is cooked & spinach wilted. Add more water if needed.
Garnish with chopped parsley (optional). Enjoy!
