Make sure you have...
Stovetop, Peeler, Grater, Pot (small), Knife
Step 1
Peel & chop the onion.
Step 2
Mince or crush the garlic.
Step 3
Peel & cut the carrot into 1-inch pieces.
Step 4
Add a drizzle of olive oil to a pot over medium heat. Add the onion & cook for 5 min, stirring occasionally.
Step 5
Add the carrots, garlic & quinoa. Cook for 5 min, stirring frequently.
Step 6
Add the veggie broth. (Or use a bouillon cube with water!) Season with salt & pepper. Cover, reduce the heat to low & cook for 20 min.
Step 7
Remove the lid. Add the spinach, shrimp, lemon juice & lemon zest. Cook for 3 min, or until the shrimp is cooked & spinach wilted. Add more water if needed.
Step 8
Garnish with chopped parsley (optional). Enjoy!
