Tomatoes (canned, peeled)
Garlic

Step 1

Add the canned tomatoes & minced or crushed garlic to a pan over medium heat. Cook, stirring for 5 min.

Mint (fresh)
Cooked shrimp
Cayenne pepper

Step 2

Add the mint, shrimp, salt & pepper to the pan. Season with cayenne or chili powder for extra kick!

Step 3

Stir to combine. Reduce the heat to low & cook for 5 min.

Couscous

Step 4

Meanwhile, in a heatproof bowl, cover the dry couscous with boiling water. Season with salt & pepper.

Step 5

Cover & set aside for 5 min, or until it's absorbed all the water.

Feta cheese (block)
Mint (fresh)

Step 6

Serve the saucy shrimp over a bed of couscous. Garnish with crumbled feta cheese, fresh mint leaves & a drizzle of oil. Enjoy!
