Oven, Baking Dish
Preheat the oven to 450°F. Slice the cherry tomatoes in half.
Cut the sausage into 1/2 inch slices.
Place the cherry tomatoes in an oven-proof baking dish. Add crushed or minced garlic, most of the basil (reserve some for garnish) & a drizzle of olive oil.
Add the sausage slices, salt & pepper. Mix to combine.
Place the salmon over top the tomato-sausage mixture. Season to taste & bake for 20 min at 450°F.
Remove from the oven when the salmon is cooked through. Serve garnished with remaining basil, arugula & drizzle of oil. Yum!
