Stovetop, Frying pan, Colander
Peel & finely chop the onion.
Heat a drizzle of oil in a pan over medium heat. Add the onion & cook, stirring for 3 min or until translucent.
Add the canned tomatoes, 1/4 cup water (per portion) & simmer for 2 min.
While the tomatoes are simmering, strain & rinse the beans under cold water. Add them to the pan & stir to combine. Season with salt & pepper. Cover, reduce heat & simmer for 3 min.
Meanwhile, whisk together the prepared pesto with 1 tbsp of olive oil (per portion). Once the beans are cooked, stir in the pesto oil.
Top with crumbled feta, fresh basil leaves (optional), salt & pepper to taste. Bravo!
