Step 1

Peel & dice the onion.

Garlic

Step 2

Heat a drizzle of olive oil in a pot over medium heat. Add the onion & minced or crushed garlic. Cook, stirring for 2 min.

Tomatoes (canned, peeled)
Cannellini beans (cooked)
Harissa (paste)

Step 3

Add the harissa paste, tomatoes & beans. (If you don't have harissa paste, try subbing in another type of spicy condiment like sambal oelek, or sriracha)

Step 4

Pour in 0.5 cup of water (per serving). Season with salt & pepper. Stir it all together.

Step 5

Cover & simmer the soup for 10 min.

Spinach (fresh)

Step 6

Turn off the heat. Add the baby spinach & stir until wilted.

Step 7

Serve & enjoy!
