Make sure you have...
Stovetop, Pot (small), Peeler, Knife

Step 1
Peel & chop the onion.

Step 2
Peel & mince the garlic.

Step 3
Peel & chop the carrots.



Step 4
Heat a drizzle of oil in a large pot over medium heat. Add the onion, carrots & garlic. Cook, stirring for 4-5 min, until starting to soften.



Step 5
Add the tomatoes, water & dry quinoa. Season with salt & pepper. Stir to combine.
Step 6
Reduce the heat to low. Cover & simmer for 15 min, or until the quinoa is tender.


Step 7
Serve the soup garnished with crumbled feta & fresh parsley (optional). Enjoy!
