Cook the rice according to the package instructions.
Cut the chicken into pieces. Heat a drizzle of oil in a pan over medium heat. Add the chicken & paprika. Cook, stirring for 5 min, or until golden brown.
In a small bowl, mix together the yogurt, lemon juice, salt & pepper.
Wash the tomatoes & cucumber. Cut the baby tomatoes in half. Cut the cucumber into cubes.
Add the cucumbers, tomatoes, salt, pepper & a drizzle of olive oil to a bowl. Add chopped mint (optional). Stir to combine.
Fluff the cooked rice.
Arrange the chicken, salad & rice in a serving bowl.
Pour the yogurt sauce over top. Garnish with lemon zest, mint leaves (optional) & a drizzle of olive oil. Season with salt & pepper. Enjoy!
