Red onion

Step 1

Preheat the oven to 375°F. Peel & slice the onions.

Butternut squash

Halve the squash & scoop out the seeds.

Thinly slice the squash. (Removing the peel is optional!)

Add the squash & onions to a parchment-lined baking dish. Season with salt & pepper. Add a drizzle of olive oil. Mix it all together. Bake for 15-20 min at 375°F, or until the squash is fork-tender.

Feta cheese (block)
Thyme (dried)
Honey

Step 5

Remove from the oven. Turn on the broiler. Arrange the feta block over the squash. Drizzle with olive oil & honey. Sprinkle with thyme. Season with salt & pepper.

Broil for 5 min, or until the feta is lightly golden. Be sure it doesn't burn!

Step 7

Remove from the oven. Serve & enjoy!
