Sweet potato

Step 1

Preheat the oven to 425°F. Wash the sweet potatoes.

Step 2

Place the whole potatoes on a baking sheet. Pierce them a few times with the tines of a fork. Bake for 30-40 min.

Remove from the oven.

Step 4

Cut them in half lengthwise.

Walnuts
Sour cream
Blue cheese

Step 5

Add the sour cream, blue cheese & walnuts to a bowl. Season with salt & pepper. Stir to combine. Dollop the mixture onto the potatoes.

Step 6

Bake for 5 min.

Arugula

Step 7

Remove from the oven. Serve with a little arugula (optional). Enjoy!
