A meaty curry for when you're really hungry for really delicious bowl of soup!
Stovetop, Pot (small), Peeler
Step 1
Peel & mince the onion & garlic.
Step 2
Peel & thinly slice the carrot.
Step 3
Peel & mince the ginger.
Step 4
Chop the chicken into chunks.
Step 5
Heat a drizzle of oil in a pot over medium heat. Add the chicken & stir. Add the garlic, onion, ginger & curry paste.
Step 6
Cook, stirring for 3-5 min.
Step 7
Season with salt & pepper. Add the tomatoes.
Step 8
Bring it to a simmer. Add the carrots, lentils & 1 cup of water (per serving). Stir it all together.
Step 9
Reduce the heat to low. Cover & simmer for 15-20 min.
Step 10
When the lentils are cooked, add the coconut milk. Season with salt & pepper. Garnish with fresh cilantro (optional). Serve & enjoy!
