Caprese Frittata with Prosciutto

Cherry tomatoes

Step 1

Preheat the oven to 350ºF. Wash & cut the cherry tomatoes in half.

Egg

Step 2

Crack the eggs into a mixing bowl. Season with salt & pepper, then beat them with a fork or whisk.

Step 3

Spray a pie dish or round baking dish with baking spray. Place a sheet of parchment paper in the bottom of the dish, then spray it again (optional).

Step 4

Add the cherry tomatoes to the baking dish & pour the egg mixture on top.

Mozzarella (fresh)
Prosciutto

Step 5

Break up the mozzarella into small pieces & add it evenly into the baking dish. Top the frittata with the slices of prosciutto.

Pesto

Step 6

Add spoonfuls of pesto on top of the frittata. Season with pepper & bake for 15-20 minutes at 350°F.

Basil (fresh)

Step 7

Remove the frittata from the oven & unmold it. Add a few basil leaves, if you have them. Enjoy!
