Make sure you have...
Oven, Whisk, Mixing bowl, Parchment paper, Round baking dish, Knife
Step 1
Preheat the oven to 375°F. Wash, trim & finely slice the zucchini.
Step 2
Crack the eggs into a mixing bowl. Add the heavy cream (optional). Season with salt & pepper. Whisk until combined & frothy.
Step 3
Line a round baking dish with parchment paper. An unlined cast iron skillet works great too!
Step 4
Arrange the zucchini slices in a single layer over the base of the dish. Season with salt, pepper & a drizzle of olive oil. Top with torn pieces of ham.
Step 5
Pour the beaten eggs into the dish.
Step 6
Tear the mozzarella & arrange over the eggs. Season with salt & pepper. Bake for 25-35 min at 375°F, or until the eggs are cooked through.
Step 7
Remove from the oven. Let cool slightly. Slice, serve & enjoy!
