Step 1

Preheat the oven to 350°F. Wash, core & dice the peppers. Peel & mince the onion.

Heat a drizzle of olive oil in a pan over medium-high heat. Add the peppers & onion. Cook, stirring for 3 min.

Milk (whole)

Step 3

Crack the eggs into a mixing bowl. Add the milk & chopped parsley (optional). Season with salt & pepper. Then whisk it all together.

Step 4

Add the veggies to a greased cake tin or round baking dish.

Pour in the eggs. Arrange dabs of ricotta over top. Season with salt & pepper. Bake for 20-30 min, or until the eggs have set. Serve & enjoy!
