Make sure you have...
Stovetop, Pot (small), Frying pan, Knife
Step 1
In a large pot of water, add the potatoes & bring the water to a boil. Once boiling, cook for 8-10 min.
Step 2
Meanwhile, wash & cut the broccoli into florets.
Step 3
Wash & chop the parsley. In a small bowl, add the crème fraîche, parsley, salt, pepper, a drizzle of olive oil & the juice & zest of the lemon. Mix thoroughly.
Step 4
After the potatoes boiled for 8-10 min, add the broccoli to the pot & cook for an additional 4-5 min.
Step 5
Pat the cod dry with a paper towel. In a frying pan, heat a drizzle of olive oil on medium-high heat & add the cod. Season with salt & pepper. Cook for 3-4 min on one side, flip & cook for an additional 3-4 min.
Step 6
Once the vegetables are cooked, drain them.
Step 7
Serve the cod alongside the potatoes, broccoli & creamy-herby sauce. Garnish with parsley leaves & a lemon wedge. Enjoy!
If you're using frozen cod, defrost the fish first!
