Cook the rice according to the package instructions. Fluff the cooked rice with a fork & set aside.
In another pot of salted, boiling water, cook the green beans for 3-4 min. Drain & set aside.
Meanwhile, heat a few dabs of butter in a pan over low heat. Zest & juice the lemon into the pan. Season with salt, pepper & mix. Cook, stirring over low heat for about 2 min.
In the same pan, add the cod & cook for 2-3 min on each side. Spoon the pan sauce over top as it cooks.
On a plate, arrange the cod with the rice & green beans. Drizzle lemon butter on top & garnish with parsley (optional). Add additional lemon & enjoy!
