Egg

Step 1

Boil a pot of water. Add the eggs to the boiling water & cook for 6 min. Transfer the cooked eggs to a bowl of ice water to stop the cooking. Remove the shell & reserve.

Cucumber

Step 2

Meanwhile, wash & dice the cucumber into 1/2-inch pieces.

Tuna (canned)
Smoked Paprika
Chives (fresh)
Greek Yogurt (plain)

Step 3

Prepare the tuna. In a bowl, mix the drained tuna, Greek yogurt, smoked paprika and chopped chives (optional). Add salt, pepper & a drizzle of olive oil. Stir to combine.

Brown rice (short grain, cooked)

Step 4

Reheat the cooked brown rice (or other grain) according to package instructions.

Step 5

Serve the brown rice (or other grain) in a bowl with the tuna and cucumber. Halve the soft-boiled egg & add it on top with extra chopped chives (optional). Serve & enjoy!
