Saucy noodles topped with protein-packed tofu for a quality veggie meal!

Make sure you have...
Stovetop, Frying pan, Pot (small), Knife
Step 1
Peel the carrots. Slice thinly on the angle.
Step 2
In a pot of salted, boiling water, cook the carrots for 8-10 min. Drain the carrots & set aside.
Step 3
Meanwhile, drain the tofu if necessary. Cut into 1-inch cubes.
Step 4
In a small bowl, combine teriyaki sauce, grated ginger & grated garlic. Mix it well.
Step 5
Heat a drizzle of neutral oil or sesame oil in a pan over medium-high heat. Add the tofu & pan-fry for 5-6 min over medium heat, flipping occasionally so it's seared on all sides.
Step 6
Meanwhile, in a pot of boiling water, cook the noodles according to package instructions. Drain & set aside.
Step 7
Once the tofu is nicely toasted, reduce the heat & add the sauce to the pan. Stir & cook for an additional 1-2 min. Add in the carrots & noodles. Mix well until everything is coated in sauce.
Step 8
Serve everything on a plate. Sprinkle with sesame seeds, if you have them. Enjoy!
