Enjoy this tasty soba noodle bowl packed with flavor & protein!
Make sure you have...
Stovetop, Frying pan, Pot (small), Knife
Step 1
Rinse & roughly chop the bok choy.
Step 2
Drain the tofu if needed & pat dry with a towel. Cut into 1 inch cubes.
Step 3
In a pot of boiling water, cook the soba noodles according to package instructions. Drain & rinse under cold water to stop the cooking. Set aside.
Step 4
Heat a drizzle of neutral oil on a pan over medium-high heat. Add the tofu in an even layer & season with salt. Cook on the first side for 1-2 min, until golden brown. Flip & cook until golden on all sides, about 2-3 more min.
Step 5
Add bok choy to the pan with half of the soy sauce & 1 tbsp of water per serving. Toss to coat evenly. Cover the pan, steam & cook for 2 min. Uncover & stir for 1 more min.
Step 6
In a small bowl, combine tahini, soy sauce & sesame seeds if you have. Whisk to combine. When the sauce becomes thick, add 2 tbsp of ice water per serving. Whisk until light & creamy. If you have ginger powder or fresh ginger on hand, add in a bit for some more flavor! A bit of honey or toasted sesame oil can also go a long way in this yummy sauce!
Step 7
Add cooked soba noodles to a serving bowl. Pour the tahini sauce over the noodles & toss to evenly coat.
Step 8
Top the soba noodles with crispy tofu & bok choy. Sprinkle sesame seeds & chili flakes on top if you have! Serve & enjoy!
