Garlic

Step 1

Peel & mince the garlic.

Zucchini
Carrots (fresh)

Step 2

Wash & trim the carrot & zucchini. Cut each into matchsticks.

Step 3

Heat a drizzle of olive oil in a pan over medium heat. Add the garlic. Sauté for 1 min. Add the carrot & zucchini.

Step 4

Cook, stirring for 2-3 min. Add a splash of water. Reduce the heat to low, cover & simmer for 10 min.

Greek Yogurt (plain)
Mint (fresh)
Lemon

Step 5

In a small bowl, combine the yogurt, lemon juice, lemon zest, salt, pepper & most of the mint (chopped).

Cumin (ground)

Step 6

Add a pinch of cumin to the veggies (optional). Turn off the heat.

Greek Yogurt (plain)

Step 7

To serve, top each tortilla with a pile of veggies, a healthy drizzle of yogurt sauce, a bit of olive oil & the remaining mint leaves. Enjoy!
