Step 1
Peel & mince the onion.

Peel the avocado. Remove the pit. Scoop out the flesh & place into a bowl.

Place a pan over medium heat. Cook the quesadillas for 2 min on each side, or until the cheese is melty.

Slice into wedges.

Serve with salsa & any leftover guacamole. Add a few drops of your favorite hot sauce for a kick!
