Wash & slice the eggplant into thin rounds.
Heat a drizzle of oil in a pan over medium-high heat. Add the eggplant. Season with salt & pepper. Cook for 2-3 min on each side. Transfer the eggplant to paper towels to drain.
In the same pan, toast the buns for 1 min.
