Oven, Baking Dish
Preheat the oven to 450°F. Wash the tomatoes. Quarter large tomatoes. Keep baby tomatoes whole.
Slice the zucchini into half moons, about 1/2 inch thick.
Peel & cut the onion into 1/2 in thick wedges.
Place the vegetables in an oven-safe baking dish. Season with salt, pepper & dried herbs (rosemary, thyme or oregano). Drizzle with olive oil. Mix to combine.
Place a slice from a large chunk of feta cheese on top of the veggies. Add another drizzle of olive oil & more pepper.
Roast until the feta is golden on top, about 20 minutes.
Serve hot with a salad or bread. It's as simple as that!
