Pork, Peanut & Noodle Stir-Fry

Fresh cucumber & mint brighten this rich & hearty stir-fry!

Stovetop, Pot (small), Frying pan, Colander


Rice noodles

Step 1

Cook or soak the rice noodles according to the package instructions.


Step 2

Wash the cucumber, cut it in half lengthwise & slice it. Set aside.

Ground pork

Step 3

Add a drizzle of vegetable oil to a pan over medium-high heat. Brown the ground pork for 4 minutes, breaking it up into smaller pieces with a spatula.

Soy sauce

Step 4

Add 3/4 of the peanuts & all the soy sauce to the pan. Cook for 1 more minute.

Rice noodles
Cayenne pepper

Step 5

Drain the noodles. Add them to the pan with a pinch of cayenne pepper. Stir & remove from heat.

Mint (fresh)

Step 6

Serve the noodles topped with sliced cucumber & the remaining peanuts. Add fresh, torn mint leaves (optional). Enjoy!
