Warm the honey & lime juice in a small pot over low heat. Add the turmeric, lime zest & a drizzle of olive oil. Season with salt & pepper. Stir to combine. Remove from heat.
Lay the pork chops in a dish & pour over the marinade.
Cover & refrigerate for 30 min.
Wash & slice the tomatoes in half.
Transfer the pork chops from the marinade to an oven-safe dish. Add the tomatoes, olive oil, salt & pepper. Bake for 20 min at 400°F.
Serve the pork chops & tomatoes with any extra marinade.
