Stovetop, Pot (small), Frying pan, Colander, Knife

Rice noodles

Step 1

Cook the rice noodles according to package instructions. Once cooked, drain & rinse with cool water.

Cucumber

Step 2

Wash the cucumber. Cut it in half lengthwise & scoop out the seeds. Slice the cucumber & set aside.

Peanuts

Step 3

Roughly chop the peanuts & set aside.

Garlic

Step 4

Heat a drizzle of oil in a frying pan over medium heat. Add the garlic (grated or minced) & cook for about 30 sec, until fragrant.

Ground pork

Step 5

Add the ground pork & break it up with a spoon. Cook until browned & cooked through (no pink remaining), about 5-6 min.

Fish sauce
Soy sauce
Honey

Step 6

Add the fish sauce, soy sauce, honey & 1 tbsp water per serving to the pan with the pork. Simmer for 1-2 min to create a sauce.

Step 7

Add the cooked rice noodles to the pan with the sauce & toss to coat.

Cucumber
Peanuts
Mint (fresh)
Sriracha sauce

Step 8

Transfer the noodles to a bowl. Top with the sliced cucumber & chopped peanuts. Garnish with torn fresh mint leaves & a drizzle of sriracha sauce (optional). Serve & enjoy!
