Pan-Fried Cod, Mashed Potatoes & Broccoli

Ingredients

Stovetop, Peeler, Pot (small), Colander, Frying pan

Potato

Step 1

Peel the potatoes & cut them into cubes.

Cook the potatoes in a pot of salted boiling water for 15 minutes, or until easily pierced with a fork.

Broccoli (fresh)

Step 3

While the potatoes are cooking, bring another pot of salted water to a boil. Wash & trim the broccoli. Separate the crown into florets that are similar in size.

Step 4

Cook the broccoli florets in the salted boiling water for about 5 minutes, or until bright green & crisp-tender. Drain & set aside.

Cod (fresh)

Step 5

5 minutes before the potatoes are done cooking, heat 1-2 tbsp of vegetable or olive oil in a pan over medium heat. Pat the cod fillet bone dry with a paper towel. Place in pan, cook for 3 minutes on first side. Turn & continue cooking until done.

Potato

Step 6

Once the potatoes are ready, drain them & transfer them to a bowl. Add a healthy drizzle of olive oil & squeeze of lemon juice (optional). Season with salt & pepper. Mash using a fork or potato masher until creamy.

Lemon

Step 7

Plate the cod, mashed potatoes & broccoli. Serve with quartered lemon slices & lemon zest (optional). Enjoy!
