Stovetop, Pot (small), Colander, Frying pan, Knife
Step 1
Bring a pot of salted water to a boil.
Step 2
Wash & cut the broccoli & cauliflower into florets. Add the veggies to the pot of boiling water. Cook until tender (5-7 min), then drain & set aside in a bowl. Drizzle with olive oil & season to taste with salt & pepper.
Step 3
Heat a drizzle of oil in a pan over medium-high heat. Pat the cod bone-dry with a paper towel. Season with salt & pepper, then add the fish to the pan. Cook for 3 min on each side.
Step 4
In a small bowl, whisk together the vinegar, lemon juice, minced shallots, salt, pepper & a drizzle of oil.
Step 5
Serve the cod alongside the vegetables. Drizzle with the shallot vinaigrette. Season with salt & pepper. Enjoy!
