Potato

Step 1

Peel the potatoes & cut them into bite-sized pieces.

Carrots (fresh)

Step 2

Peel & slice the carrot.

Yellow onion

Step 3

Peel & chop the onion.

Curry powder

Step 4

Heat a drizzle of olive oil in a pot on medium heat. Add the onion & curry powder. Cook for 2-3 min until the onion is translucent.

Tomato paste

Step 5

Add the tomato paste, carrots & potatoes. Season with salt & pepper. Mix to combine.

Coconut milk

Step 6

Add the coconut milk & about 1 cup of water per serving. Stir, cover & cook over medium heat for about 15-20 min.

Chickpeas (canned)

Step 7

Uncover & add the chickpeas. Season to taste with salt & pepper. Continue cooking for another 3-5 min uncovered.

Cilantro (fresh)
Lime

Step 8

Serve with the cilantro & lime juice. Enjoy!
