Make sure you have...
Oven, Parchment paper, Knife
Step 1
Preheat the oven to 450°F. Wash the vegetables. Cut any large tomatoes into quarters.
Step 2
Cut the zucchini in half lengthwise. Cut each piece lengthwise again. Then cut into 4-inch pieces.
Step 3
Add the vegetables to a baking dish with the dried herbs, salt, pepper & a drizzle of olive oil. Mix together to coat.
Step 4
Place the sausages over the veggies. Prick the sausages a few times with a fork.
Step 5
Bake at 450° for 25 min, or until everything is golden brown. Serve & enjoy this flavorful dish!
