Sweet potato

Step 1

Peel & dice the sweet potato.

Heat a drizzle of oil in a pan over medium heat. Add the sweet potato. Cook, stirring for 5 min.

Garlic

Peel & mince the garlic. Add a bit of water to the sweet potatoes. Then add the garlic & paprika (optional). Stir & cook for 10 min. If needed, add more water to keep it from sticking.

Egg

Step 4

Heat a drizzle of oil in another pan over medium heat. Fry the eggs for about 4 min, or until done to your liking.

Feta cheese
Parsley (fresh)

Step 5

Serve the sweet potato hash topped with fried eggs. Garnish with feta cheese & parsley (optional). Season with salt & pepper. Add a drizzle of oil. Enjoy!
