Step 1
Peel & dice the sweet potato.
Step 2
Heat a drizzle of oil in a pan over medium heat. Add the sweet potato. Cook, stirring for 5 min.
Step 3
Peel & mince the garlic.
Step 4
Add garlic, paprika (optional), salt, pepper & a splash of water to the sweet potatoes. Stir it all together. Cover & cook for 10 min, stirring occasionally.
Step 5
Melt a dab of butter in a pan over medium heat. Fry the eggs for about 4 min, or until cooked to your liking.
Step 6
Serve the sweet potato hash topped garnished with crumbled feta cheese & freshly chopped parsley (optional). Arrange the fried eggs on top. Season with salt & pepper. Enjoy!
