The same rich & flavorful caramelized onions from your favorite French soup, now in pasta form!
Make sure you have...
Stovetop, Pot (large), Knife
Step 1
Wash & finely chop the parsley.
Step 2
Peel & thinly slice the onions.
Step 3
Heat a few dabs of butter in a pot over medium-high heat. Add the onions & stir until they become translucent, about 3-4 min. Cover the pot for 2 min, then remove the lid, stir well & repeat the process 2-3 times until the onions are nicely caramelized. (time will vary depending on servings of onions!)
Step 4
Deglaze the bottom of the pan with white wine vinegar, scraping up the all the brown bits until the vinegar evaporates. Season with salt & pepper, then mix once more.
Step 5
Pour in the uncooked pasta & veggie broth. Stir to combine & submerge the pasta in the liquid. Bring everything up to a boil, then reduce to a simmer. Cover the pot & cook 8-10 min until the pasta is cooked to your liking.
Step 6
Turn off the heat, then stir in most of the parmesan cheese & chopped parsley until well combined.
Step 7
Serve in a bowl garnished with more chopped parsley & parmesan if desired. Enjoy!
