Roughly chop the peanuts.
Wash & roughly chop the cilantro leaves.
In a dry hot pan, toast the cumin seeds & peanuts for about 2 min, or till you hear the cumin seeds pop.
Remove from the heat. Set them aside on a small plate.
Wash & slice the cucumber into thin rounds.
Peel & finely slice the red onion.
In a serving bowl, combine the cucumber, onion, peanuts, cumin seeds, lemon juice, salt & pepper.
Toss it all together. Garnish with fresh cilantro. Enjoy!
