Taquitos are deliciously fried, rolled-up tacos! We love this baked method for a little less mess :)

Step 1
Preheat the oven to 400°F. Carve the breast off the rotisserie chicken. Use two forks to shred the meat. Then add it to a medium bowl.




Step 2
In the bowl with the chicken, add taco seasoning, 2 spoonfuls of salsa per serving, shredded cheese, 2 spoonfuls of sour cream & a drizzle of olive oil. Mix it all together!

Step 3
Dampen two paper towels & wrap them around the corn tortillas. Place the wrapped tortillas on a plate & heat in the microwave for 35-40 sec. This will soften the tortillas so they are able to roll up nicely!

Step 4
Melt some butter in the microwave or a small saucepan over medium-low heat.
Step 5
Spread the cheesy-chicken mixture over each softened tortilla. Roll each one, tightly into a long cylinder.
Step 6
Line a sheet tray with parchment paper. Grease with a bit of cooking spray or melted butter. Add each taquito to the tray. Brush melted butter over each one so they are well-coated. Bake in the oven at 400°F for 25-30 min, flipping halfway through. The taquitos should be golden & crispy!

Step 7
Serve the taquitos with salsa, guacamole (optional) & sour cream! Enjoy!
