Tomato

Step 1

Preheat the oven to 425°F. Wash & small dice the tomato.

Olive oil
Ground beef

Step 2

Heat a drizzle of oil on a pan over medium-high heat. Add the ground beef. Cook for 3-4 min, breaking it into pieces with a spatula. Season with salt & pepper. Continue cooking until the meat is no longer pink.

Black beans (canned)
Taco seasoning

Step 3

Add drained & rinsed black beans to the beef. Add taco seasoning & mix it all together for 1 more min.

Tortilla chips
Mexican cheese blend
Pickled jalapeño peppers

Step 4

Line a sheet tray with foil. Spread tortilla chips on the tray in an even layer. Top with the beef & bean mix. Add a layer of shredded cheese & a sprinkle of pickled jalapeños (optional). Bake in the oven at 425°F for 10-12 min until the cheese is melty.

Garnish the hot & melty nachos with shredded lettuce, diced tomato, more pickled jalapeños (optional) & thinly sliced scallions if you have! Add a few dollops of sour cream & dig in! Enjoy!
