Jasmine rice

Step 1

Cook the rice according to package instructions.

Cooked shrimp
Curry powder

Step 2

Heat a drizzle of oil in a pan over medium-high heat. Add the shrimp & curry powder. Season with salt & pepper. Cook, stirring for 2 min.

Coconut milk (full fat)

Step 3

Add the coconut milk & stir. Season with salt & pepper. Reduce the heat to low. Simmer for 3 min, or until the shrimp is heated through.

Cilantro (fresh)
Ginger (fresh)

Step 4

Serve the curried shrimp over the rice. Top with chopped fresh cilantro. Garnish with a bit of grated ginger (optional). Enjoy!
