Step 1

Preheat the oven to 400°F. Wash the vegetables. Cut the tomatoes into quarters.


Step 2

Cut the zucchini in half lengthwise, then into thin slices.

Peel & quarter the onion into wedges.

Cut the pepper into large cubes.

Step 5

Place all the vegetables in a baking dish. Add olive oil, salt & pepper. Stir to combine. Bake for 20 min.

Cod (fresh)

Step 6

Then remove the dish from the oven. Lay the cod over the vegetables. Add a drizzle of olive oil & a sprinkle of salt & pepper. Bake for another 10 min.

Step 7

Remove from the oven & serve. Enjoy!
