Step 1
Preheat the oven to 400ºF. Peel & small dice the yellow onion.
Step 2
Heat a drizzle of olive oil in a frying pan over medium-high heat. Add the ground beef & taco seasoning. Break up the meat using a spatula & cook for 3-4 min or until the meat is browned.
Step 3
Add the refried beans, stir & cook for another 1-2 min. Add half of the enchilada sauce & stir again.
Step 4
Add the diced onion & another drizzle of oil. Stir & cook for another 2-3 min. Remove the meat mixture from the heat.
Step 5
Add a drizzle of olive oil to a baking dish. Assemble the enchiladas: add a tortilla to the baking dish, top the tortilla with a few scoops of the meat mixture. Roll the tortilla up. Arrange it in the baking dish seam-side down. Repeat this process with the remaining meat mixture & tortillas.
Step 6
Top the enchiladas with the remaining sauce. Spread evenly throughout the baking dish. Top the enchiladas with the shredded cheese. Bake for 18-20 min at 400ºF until the enchiladas are melty & bubbly.
Step 7
Serve the enchiladas topped with fresh cilantro leaves (optional). Enjoy!
