Step 1
Preheat the oven to 350°F. Wash & slice the squash in half lengthwise. Cut off an outer slice of each rounded edge, so the squash lies flat in the baking dish.
Step 2
Scoop out the seeds. Transfer the squash to the baking dish.
Step 3
In a small bowl, combine the minced garlic, cream, salt & pepper.
Step 4
Arrange the goat cheese in the hollowed wells of each piece of squash. Goat cheese rounds work great here! Spoon the garlic-cream mixture over the goat cheese. Sprinkle dried thyme over the squash. Drizzle with olive oil. Season with salt & pepper.
Step 5
Add a splash of water to the perimeter of the baking dish. Cover the dish with foil or an oven-proof lid. Bake for 30-35 min at 350°F. When the squash is close to fork-tender, uncover & cook for 5-10 min.
Step 6
Remove the dish from the oven. This is lovely served with a baby green salad! Enjoy!
