Oven, Parchment paper, Immersion blender, Baking dish, Knife
Step 1
Preheat the oven to 400°F. In a food processor or immersion blender bowl, mix the bread crumbs, garlic, parsley, salt & pepper.
Step 2
Cut the tomatoes in half. Place them on a parchment-lined baking sheet. Spread the breading over top each tomato & drizzle with olive oil. Bake for 20 min.
Step 3
Serve the tomatoes over a bed of arugula. Enjoy!
