Step 1

Be sure to follow the puff pastry package instructions! Preheat the oven to 400°F. Lay the puff pastry on a parchment-lined baking sheet or in a pie pan. Pierce the dough several times with a fork. Spread a layer of pesto over the base of the tart.

Pre-bake the crust for 5 min, or according to the package instructions.

Wash & halve the baby tomatoes.

Step 4

Remove the crust from the oven. Arrange the cherry tomatoes in a single layer over the tart. Season with salt, pepper & a drizzle of olive oil. Bake for 20 min, or until the crust is golden brown.

Step 5

Remove the tart from the oven. Garnish with crumbled goat cheese. Enjoy!
