Tuna Grain Bowl with Egg & Cucumber

Step 1
Boil a pot of water. Add the eggs to the boiling water & cook for 6 min. Transfer the cooked eggs to a bowl of ice water to stop the cooking. Remove the shell & reserve.

Step 2
Meanwhile, wash & dice the cucumber into 1/2-inch pieces.




Step 3
Prepare the tuna. In a bowl, mix the drained tuna,* Greek yogurt, smoked paprika and chopped chives (optional). Add salt, pepper & a drizzle of olive oil. Stir to combine. *Check out our tips for this step

Step 4
Reheat the cooked brown rice (or other grain) according to package instructions.
Step 5
Serve the brown rice (or other grain) in a bowl with the tuna and cucumber. Halve the soft-boiled egg & add it on top with extra chopped chives (optional). Serve & enjoy!
