Fire roasted peppers (jarred)

Step 1

Chop the roasted red pepper.

Fire roasted corn
Black beans (canned)
Pepper Jack cheese (shredded)

Step 2

In a mixing bowl, add drained & rinsed black beans, fire roasted corn, chopped peppers, salt, pepper & a pinch of cumin or chipotle seasoning if you have! Mix it all together. Stir in the shredded pepper jack cheese & stir again.

Flour tortilla (medium)

Step 3

Warm the flour tortillas for 10-15 secs on a pan or in the microwave. On a flat surface, lay one tortilla & add a few spoonfuls of the mixture in the center. Roll the tortillas over the filling, like mini burritos. Repeat with the remaining mixture.

Step 4

Arrange the rolls in the base of an air fryer. Spritz each roll with neutral baking spray or brush with olive oil. Air fry at 390°F for about 12 min, flipping halfway through, until golden brown.

Avocado lime dressing

Step 5

Use a serrated knife to slice the rolls in half. Serve immediately with avocado lime dressing for dipping. Enjoy!
