Make sure you have...
Stovetop, Pot (small), Knife
Step 1
Peel & dice the onion.
Step 2
Peel & dice the carrots.
Step 3
Peel & dice the celery.
Step 4
Juice the lemon into a small bowl & set aside.
Step 5
Peel & chop the garlic.
Step 6
Heat a drizzle of oil in a pot over medium-high heat. Add chicken breast. Season with salt & pepper. Sear for 3 min on each side to lightly brown, then remove & set aside.
Step 7
In the same pan, add onion, carrots, celery & garlic. Season with salt & pepper. Stir to combine & cook for 4 min or until veggies have softened.
Step 8
Pour in chicken broth & stir. Add chicken breast & any juices back into the pot. Bring everything to a simmer & cook for 5 min or until chicken is fully cooked.
Step 9
Transfer the chicken to a plate & set aside.
Step 10
Stir in orzo & cook for 7-8 min. Once cooked, remove from heat.
Step 11
Shred the chicken using two forks.
Step 12
Add the shredded chicken & lemon juice to the pot. Stir to combine. Season with additional salt & pepper if desired.
Step 13
Serve in a bowl garnished with parsley or chives if you have & enjoy!
