Stovetop, Pot (small), Grater, Whisk
Step 1
Grate the parmesan & Gruyère. Crumble the blue cheese & goat cheese. Add all the cheese to a bowl & set aside.
Step 2
Bring the milk & water to a simmer in a small pot over medium-low heat. Pour in the polenta. Stir continuously for 3-5 min.
Step 3
Season with salt & pepper. Reduce the heat to low & cover. Cook for another 3-5 min, or until the polenta is smooth & creamy. Add more water if needed.
Step 4
Add the cheeses to the pot. Stir & turn off the heat. Season with salt & pepper. Continue mixing until the cheeses have melted into the polenta. Serve garnished with arugula (optional). Enjoy!
