Preheat the oven to 450°F. Scrub the baby potatoes. Add them to a pot of salted boiling water. Cook for 7-10 min, or until fork-tender.
In a small bowl, mix together the yogurt, feta, chives, salt & pepper.
Drain the potatoes. Arrange them on a parchment-lined baking sheet. Use the bottom of a small pot to break them open. Smash!
Top the potatoes with a drizzle of olive oil. Season with salt & pepper. Bake for 20-25 min at 450°F, or until golden brown.
Serve the potatoes hot. Add dollops of the cool feta-yogurt sauce over top. Enjoy!
