Step 1

Wash the zucchini & cut into thin, long strips using a vegetable peeler.

Step 2

Avoid using the seeds of the zucchini.

Almonds (sliced)

Step 3

Slice or roughly chop the almonds, if whole. Toast them in a hot skillet, if desired.

Fresh goat cheese

Step 4

In a bowl, combine the goat cheese, almonds & a drizzle of oil. Season with salt & pepper.

Mint (fresh)
Tortilla (flour)
Arugula

Step 5

Spread the goat cheese mixture onto the large tortillas or wraps. Top with fresh mint, zucchini, a drizzle of honey & arugula.

Step 6

Fold in the edges, then roll it up. Cut in half & enjoy!
