Cook or soak the rice noodles according to package instructions. Drain & set aside.
Wash & trim the zucchini. Cut in half lengthwise & slice into half moons.
Heat a drizzle of vegetable or sesame oil in a pan over medium-high heat. Add the zucchini, curry powder & minced or crushed garlic. Cook for 3 minutes, stirring frequently.
Add the peas & coconut milk. Season with salt & pepper. Cook over medium heat for 5 minutes.
Add the noodles to the pan with the vegetables. Stir to combine. Add fresh cilantro (optional). Enjoy!
