Onion (yellow)

Step 1

Peel & mince the onion.

Heat a dab of butter in a pot over medium heat. Add the onion. Cook, stirring for 3 min.

Tomatoes (canned, peeled)
Broth (vegetable)
Garlic powder

Step 3

Add the tomatoes, garlic powder & vegetable broth. Cover & simmer for 10 min.

White bread (sliced)

Step 4

Butter the outside of each slice of bread.

Mozzarella (shredded)
Cheddar (shredded)

Step 5

Turn the slices over. Fill half of the slices with cheese. Close each sandwich, being sure the buttered sides are facing outward.

Step 6

Heat a pan over medium heat, grill the sandwiches for 3 min on each side, or until the cheese is melty & the bread golden. Keep warm while you finish making the soup.

Tomatoes (canned, peeled)

Step 7

When the soup is finished simmering, season it with salt & pepper. Purée it using an immersion blender, blender or food processor. It should be completely smooth & creamy.

Basil (fresh)

Step 8

Serve the soup garnished with cream & basil leaves (optional). Dip in your grilled cheese & enjoy!
